Grandma Ninny’s Famous Banana Bread Muffins

Ingredients
  • 1/4 c Rockwell's Coconut Oil
  • 1 c Rockwell's coconut sugar
  • 1 egg flax egg if making vegan
  • 1 1/2 c flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 ripe bananas
  • 1/2 c chopped walnuts or pecans optional

  • 1/4 c Rockwell's Coconut Oil
  • 1 c Rockwell's coconut sugar
  • 1 egg flax egg if making vegan
  • 1 1/2 c flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 ripe bananas
  • 1/2 c chopped walnuts or pecans optional
Instructions
  1. Whip coconut oil with coconut sugar. Add in egg (or flax egg).
  2. Add banana’s and combine until fully mixed.
  3. In separate town mix together all dry ingredients and add to wet mixture 1 cup at a time.
  4. Spray muffin tin with our Spray coconut oil or use liners and fill tins 3/4 full. Bake at 350c for 15-20 minutes or until toothpick is inserted and comes out clean.
  5. For an extra little coconut flavour and crunch, sprinkle raw muffins with Rockwells coconut chips before baking.
