Overnight Chia Oat Parfait
We love this recipe because you can make everything the night before and assemble in the morning in minutes. Healthy made convenient!

Ingredients
For the Oats
  • 1 C organic quick oats
  • 2 C almond milk
  • 1/4 C Rockwell's Chia Seeds
  • 1 ripe banana, mashed
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp vanilla protein powder We used Vega brand
  • 1 tbsp Rockwells Coconut Syrup (maple flavoured)
  • pinch of salt
For the chia pudding
  • 1 can organic lite coconut milk (about 2 cups)
  • 1/4 C chia seeds
  • 1 tbsp Rockwells Coconut syrup (maple flavour)
  • a pinch of salt

Instructions
Oats
  1. Mix all ingredients together and store in an airtight container overnight or for min 6hrs.
Chia Pudding
  1. Mix all ingredients together and store in airtight container overnight or for 4 hrs min.
To Assemble
  1. Layer oat and chia mixtures with desired fresh fruits. For this recipe we used local fresh figs, peaches and blackberries.
