Overnight Chia Oat Parfait
We love this recipe because you can make everything the night before and assemble in the morning in minutes. Healthy made convenient!
For the Oats
organic quick oats
Rockwell’s Chia Seeds
ripe banana, mashed
vanilla protein powder
We used Vega brand
Rockwells Coconut Syrup (maple flavoured)
pinch of salt
For the chia pudding
organic lite coconut milk (about 2 cups)
Rockwells Coconut syrup (maple flavour)
a pinch of salt
Mix all ingredients together and store in an airtight container overnight or for min 6hrs.

Layer oat and chia mixtures with desired fresh fruits. For this recipe we used local fresh figs, peaches and blackberries.
