Salted Chocolate Peanut Butter Balls

Peanut Butter Balls
  • 3/4 c natural unsweetened peanut butter
  • 1/4 c Rockwell's coconut syrup (natural flavour)
  • 1/4 c Rockwell's Coconut Oil (melted)
Salted Chocolate Coating
  • 1 c dark chocolate chips
  • 1/4 c Rockwell's Coconut Oil

Peanut Butter Balls
  • 3/4 c natural unsweetened peanut butter
  • 1/4 c Rockwell's coconut syrup (natural flavour)
  • 1/4 c Rockwell's Coconut Oil (melted)
Salted Chocolate Coating
  • 1 c dark chocolate chips
  • 1/4 c Rockwell's Coconut Oil

Assembly
  1. Combine ingredients in bowl and mix thoroughly. Place in freezer for 20 minutes to firm up. Remove from freezer, stir and scoop into 1-2 tbsp size balls. Place back in freezer for 10 minutes.
To Coat
  1. Combine chocolate chips and coconut oil on a double boiler just until melted. Remove balls from freezer, dip into chocolate and sprinkle with sea salt or crushed peanuts. Put balls in fridge or freezer to firm up. Store in fridge for up to 2 weeks .... if they last that long, because YES they are that good! Enjoy!
