Strawberry Chia Seed Jam

  • 4 c frozen strawberries
  • 1/4 c Rockwell's Organic Maple Flavoured Coconut Syrup
  • 2 tbsp Rockwell's Organic Chia Seeds
  • 1 tsp pure vanilla extract
  • one squeeze of fresh lemon juice
  • a pinch of salt

  • 4 c frozen strawberries
  • 1/4 c Rockwell's Organic Maple Flavoured Coconut Syrup
  • 2 tbsp Rockwell's Organic Chia Seeds
  • 1 tsp pure vanilla extract
  • one squeeze of fresh lemon juice
  • a pinch of salt
Instructions
  1. In a pot over medium-high heat stir together berries, syrup and salt until combined.
  2. Simmer for 5-8 minutes allowing the berries to soften and release liquid.
  3. Reduce heat to medium and mash berries with a potato masher until its a smooth consistency. Add chia seeds.
  4. Reduce heat to low stirring consistently for 8-15 minutes. Once most of the liquid has cooked off and the jam has thickened remove form heat and stir in vanilla extract and lemon juice.
  5. Transfer jam to a bowl and allow to cool in fridge uncovered for 2 hours. Once cooled store in an air tight container in fridge for up to 2 weeks or in the freezer for up to 2 months.
